Thomas Hull has created a very nice and short introduction to the Mathematical side of Origami. It is that webpage that has given me the initial spark of interest, and the mathematical axioms I used to build my model.
François Labelle presented, a few years earlier than myself, a very similar project, but for Compass & Edge. His own report is available at http://www.cs.mcgill.ca/~sqrt/cons/constructions.html and makes a very good introduction to a more familiar geometry model.
